Crispy Air Fryer Breakfast Potatoes

Winter mornings call for a hearty breakfast! The air fryer has changed the game for me personally when it comes to creating a breakfast spread, especially when I have company. Before the air fryer I would have had to roast or pan fry these potatoes and hope that they would time up perfectly with my favorite waffles and ham scramble. Now, just a few minutes of prep and throw them in the air fryer and we have ourselves a complete meal that is thoughtfully seasoned and air fried to crisp perfection!

I typically do these with russet potatoes, but any potatoes – including sweet would do the trick! Sometimes, if I am prepping a meal for a big group the night before I will dice up a few extra potatoes and soak them in cold water overnight until I am ready to use.

These potatoes are inspired by my love of all things spicy (in moderation). As we have traveled through the southern states of the U.S. we have picked up a few spices that are now staples in my pantry.

With a breakfast that is on the sweeter side I like to spice up my potatoes and include some of my favorite seasonings.

Old Bay Seasoning is one of my staples in quick meals. Just a few sprinkles adds loads of flavor! Typically you see Old Bay used in meats and seafoods. If you have ever visited Maryland in the summer you know that just about every restaurant uses Old Bay on their famous crab dishes. This stuff is great on everything!

Tony Chachere’s Original Creole Seasoning is another spice with a little kick and a whole lotta flavor! This one is also most often for meat and seafood and is reminiscent of a steak seasoning.

One of our favorite hot spices is the “Slap Ya Mama” Cajun Seasoning from Ville Platte, LA. This stuff is HOT HOT, and a little goes a long way. This simple, all natural spice is straight from Louisiana and packs a punch.See the hand written “I Dare U!”, that was written by my mother in law who did not think the title of the spice was very nice :).
