This one takes me way back to my days at girl scout camp. Camp Wind in the Pines. My fondest memory there was a potluck and these are the one cute dessert that stuck with me to this day. I have always been a fan of fine details which is probably why I LOVE THESE COOKIES! So easy and so cute! As an adult these have come back into my life at the tea parties I hold for my niece. With her being a girl scout I find myself making as many things possible with my surplus of cookies!
These are for inspiration – but get as detailed as you can dream! You can put these together with anything you have on hand, we used store bought icing and colored it, pre-colored gels would work as well!

Ingredients
- 1 Sleeve Thin Mints (about 16)
- 32 Nilla Wafers
- 1/2 Cup Store Bought Frosting
- 1/4 Cup Shredded Coconut
- Food coloring (green, red, yellow)
Instructions
- Place 16 Nilla Wafers rounded side down on baking sheet. Put a small dot of frosting onto each wafer then top it with a thin mint cookie.
- Separate the remaining frosting into 3 bowls. Start by adding 4-5 drops of food coloring and continue to add until it reaches the desired color.
- Spoon or pipe a small amount of each frosting color onto the thin mint cookie. Top with a small pinch of coconut. Top with second Nilla Wafer. Enjoy!
